 Meta food makes me happy, and what could be more meta than pasta shaped like pizza with “pepperoni pizza” inside? (vegan substitutions possible!)   Farfalle is my favorite unfilled pasta shape, but then to stuff it? Mind (AND HEART) explodes! The filling is a serious crowd-pleaser and based off my favorite calzones from a little pizzeria in Napoli. Artichoke hearts and sun-dried tomatoes are bolstered by ricotta, basil and pine nuts for one of life's truly great combinations. We make everything (dough, filling, shapes) DURING class, so you just need to gather your ingredients and tools.   $37. For specifics and to reserve, click here

February 13- Heart Shaped Gnocchi

  Weave your way into the hearts of anyone who you grace with plates of these gorgeous patterned ravioli filled with a decadent mixture of triple creme cheese, pears and balsamic. This is the pasta technique to end all techniques. One of those shapes that's almost too pretty to eat, yet too delicious not to. We'll make purple and yellow pasta dough as well as the filling DURING class itself, so all you need to do is gather your ingredients and tools and get ready for a day of floury fun.  $38.

February 13- Heart Shaped Gnocchi

 Master the Art of Colorful Ricotta Gnocchi and celebrate love and friendship, too! This gnocchi class is perfect for anyone who wants to jump into the world of pasta without using a machine or special gadgets. We’ll make both white and red gnocchi dough and eventually we’ll even swirl them together to make a marbled tie-dye pink swirl mashup. We will learn to shape the gnocchi traditionally and, because it’s Valentine’s weekend, we’ll also form them into hearts. If you don’t have a heart-shaped cookie cutter, you can use any other shape you do have, or just stick with the classic little nuggets of love. This class is appropriate for all ages, but adults might want to supervise the quick few moments using a grater. Specialized Equipment Needed for Class: rolling pin, cheese grater, heart cookie cutter (optional). $33

February 13- Heart Shaped Ravioli- stripes and polka dots!

 When your world needs a little love, it's ravioli to the rescue! These hearts feature two patterns - both stripes and polka dots! Classically filled with a ricotta-Parmigiano mixture, they're as yummy as they are pretty. This lesson is perfect for galentines, lovers, friends, and families looking for a festive way to celebrate Valentine’s weekend. Kid-friendly, but an adult should be present to assist with the blender and pasta sheeting machine. Specialized Equipment Needed for Class: pasta sheeting machine, blender or hand/stick blender.  $37

In-Person Workshops for Private Groups

These in-depth workshops typically begin around 12pm and wrap around 4:00. Midweek evening options are also available from 5:00 to 9:00pm. Workshops include lunch (or dinner) and wine. You will take home all the pasta you create, which is enough for several meals. 

 

We make pasta dough and at least 3 different shapes of pasta, all featuring different colors and patterns. The specific shapes we will learn are customizable to your preferences, but generally include at least one filled pasta such as agnolotti, and two unfilled pastas, such as farfalle and garganelli. Ahead of time, we can discuss options and tailor the pasta shapes to your preferences. Tortellini, anolini, agnolotti, farfalle, pappardelle, garganelli, ingannapreti, and caramelle are all popular choices. 

 

 Pasta workshops are hosted in my pasta studio, located 30 minutes E of downtown Seattle. The minimum base rate includes 2 people and is priced at $600. Each additional person is $250. 

 

Covid Concessions: I am not offering in-person classes of more than four people at this time unless they are all from the same "quaranteam". The spacing of the classroom allows for two groups of two to remain separate, should the two duos not be from the same household. Fastidious sanitization practices are observed. Please wear a mask in and out of the classroom. As with restaurants, when you are at your table working and eating, you may remove it. 

 

I am more than happy to welcome vegetarians. I can also make vegan accommodations with plenty of notice.

Private Group Zoom Workshops

Private virtual workshops are suitable for team-building events, morale events, family "get-togethers" for folks who live far apart, virtual birthday parties, club and youth organization classes, et cetera. 


I have a 2-hour and a 4-hour version of these private workshops, all hosted on zoom or your preferred digital platform. I have a double camera setup that participants can toggle between, and participants are encouraged to turn on their cameras so I can help guide them along and set them up for maximum pasta success! 


During the two hour workshop, we make two dough colors, one filling, and 1-2 pasta shapes, depending on your preferences. Participants do not need a pasta machine for this class, however if all participants have access to a pasta machine of any sort, it makes a wider variety of shapes possible, or should I say pastable! This lesson starts at $300 for 4 people, with each additional person adding $30. 


 During the 4 hour workshop, we make 5 dough colors plus filling in class and then turn the dough into several different types of pasta. Colors and shapes are customizable to your preferences, but generally include at least one filled pasta such as agnolotti, and two unfilled pastas, such as farfalle and garganelli. Ahead of time, we can discuss what you want to learn, and tailor the pasta shapes to your preferences. Egg yolk-filled raviolone, anolini, agnolotti, farfalle, pappardelle, garganelli and caramelle are all solid, popular choices. This workshop is priced at $500 for 4 people. Above 4, each additional person is $35.  


Note on equipment- I can customize workshops to the tools participants have on hand. If people do not own a pasta machine, we can create hand-formed pasta shapes using little more than a rolling pin, knife or other common household objects. For more advanced classes, it is handy for participants to have both a pasta machine and a blender. Often when people do this for corporate or party events, they purchase pasta machines for all attendees, which start at around $35. Please ask me for recommendations if you decide to go this route. 


Note on ingredients- Most of the ingredients we use during pasta class are easy to find in grocery stores. The dough colors we make can be customized to use things that are readily available for all participants. For classes that go beyond several colors, some ingredients may need to be ordered online. Below are the six most common dough colors and the ingredients I use to create them. Beyond the below list, 20+ additional colors are available. We can discuss this during class planning. 

Red- beets

Orange- harissa or other roasted pepper spice paste such as Calabrian chili paste

Yellow- turmeric 

Green- parsley

Blue- butterfly pea flowers (inexpensive online)

Purple- blueberries & beets

Virtual Pasta Ninja Personal Training

One-on-One Pasta Sessions

For serious students who wish to go beyond the basics of pasta, I offer one-on-one zoom sessions. These classes are highly customizable. You get to learn EXACTLY what you want. I have trained students on new equipment, helped correct specific problems students have encountered in the past, improved speed, agility, form, et cetera. Think of me as your pasta personal trainer in this instance. Each session is typically two hours long and I can do just one lesson or we can meet weekly or biweekly over a period of time. If you can dream it, we can create it during our time together. If you know you want to go deeper but aren't sure exactly what you want to learn, I can create a program just for you. These classes are suitable for all skill levels, since they're tailored to YOU.

In-Person Group Workshops (on hold until post-C19)

We will begin the workshop by making 6 different colors of dough, and this will become our palette to create a rainbow of pastabilities. Each dough color is made from vegetables, herbs, and superfoods. 

 

While our dough is resting, we will enjoy a delicious fresh pasta meal, along with wine to fortify us for the adventures ahead. 

 

After dining, we will jump into our first shape- two-tone farfalle, or bow ties, as they are sometimes called.    

 

Once we’ve mastered farfalle, we will learn to make a special Piedmontese filled pasta called agnolotti. The agnolotti will feature a striped pattern. 

 

You are welcome to take photographs of your pasta creations. We will even have a great natural light zone set up for maximum photo beautification. 

 

Throughout the workshop, Linda will demonstrate techniques for making various patterns and shapes of pasta, and participants will have the freedom to delve deep into the two shapes and patterns detailed above, or make a fewer number of a wider variety of shapes and patterns. Participants will take home all of the pasta they create.
