I’ve been working for quite some time behind the scenes to crack the code of glorious gluten-free pasta that isn’t too crumbly, too gummy, or so labor-intensive it deters people from joining in the pasta-making fun. I’m finally ready to share the results, and I invite you along for the delicious journey.
In this class, we will make two different colors of gluten-free dough, filling, and 3 pasta shapes: farfalle, tagliatelle & agnolotti. A blender is essential to achieve the correct puree consistency of color. A pasta machine is optional but encouraged. A pastry/bench scraper is essential as well as a rolling pin. The recipes will work with your favorite gluten-free flour mix, but I will give you recommendations on which commercially-available mixes I found to perform best, as well as the ingredients in the mixes, both so you could blend your own if you wanted, and for allergen purposes.
This class is completely gluten-free with vegan modifications possible.
